Summer 2016 is coming to a close (sob sob). We have been hard at work getting Casita up and running (update coming soon)! What better way to celebrate these last schedule-free days than with a little farmer’s market inspiration. Right now we are swimming in cucumbers, mint, peaches and basil. Check out the below for some fresh cocktail recipes. Now we are off to debate which one of us is KT1 and which one is KT2.
Directions: In a tall glass muddle several chunks of cucumber, one chopped lime, 10-15 mint leaves and sugar. Fill the glass with ice and add 1.5 ounces (1 shot glass) of white rum. Fill remainder of glass with chilled club soda. Add an extra squeeze of lime juice if desired. Now melon ball the remaining cucumber and put on toothpick for garnish. Best enjoyed with a straw and extra lime slices.
Peach Basil Sangria:
2 tablespoons sugar
bunch of basil
1 bottle white wine
1 cup triple sec
Directions: Chop 4 peaches and place in small saucepan. Sprinkle with sugar and 2 tablespoons of water. Place over low heat and let simmer until fruit is soft and liquid is mostly absorbed. Mash with a fork and let mixture cool completely. In a large pitcher combine peach puree, chilled wine, and triple sec. Mix well. Thinly slice remaining two peaches. Add to pitcher. Chop basil (or chiffonade if you are fancy) and add to pitcher. Pour and enjoy!
